A new, gourmet taco joint opened in Colorado Mills Oct. 18 from the same team that made 5280 Burger Bar. Called Guapo Taco, it has both traditional Mexican tacos like carne asada and carnitas and Americanized concepts like the Maine lobster taco and a Texas brisket taco.
“The idea with 5280 was that burgers are fabulous comfort food, we’re going to be a little outside the box and it was my favorite thing. My other favorite thing is tacos,” said Don Redlinger, owner of both 5280 and Guapo Taco. “I think that’s what we’ve done really well with the burgers and what we’re going to do really well with the tacos: be really good at upscale comfort food and accessible fun stuff.”
Redlinger sees the menu changing all the time, and not being “your standard fare.”
“It’s gourmet, chef-driven, tacos, a bit different than the other Mexican food out here,” he said.
Guapo Taco’s head of kitchen and Chef, Sergio Cardoza, was a major part of how the menu came about, said Redlinger. He, Cardoza and Director of Operations Todd Levick went to taco joints wherever they were for six months as research, according to Redlinger.
“I had a lot of fun eating it, they had a lot of fun making it for me,” he said.
Other tacos on the menu are a pork belly taco in pepper jam, Redlinger’s current favorite, a cold, sushi-grade Ahi tuna taco, and a baha Chicago taco with chorizo, mustard slaw, chopped onions and peppers.
“I think tacos really lend themselves to social food where you can sit and share and drink and hang out,” said Redlinger when asked how Guapo Taco will differ from 5280 Burger Bar. “That’s our idea with it, a bit more bar-based.”
